Shakshouka

Great for breakfast or brunch, this rich tomato-based egg dish is sure to take your senses to another level. Eggs are poached in a hearty tomato mixture with a hint of sweetness from bell peppers and a smoky flavor from some cumin. You can customize it any way you like. Some folks like to add feta or sausages to their shakshouka or even top it off with some sour cream and avocado. I kept mine simple for this with just some parsley and spring onions on top. The best part is that it is essentially a one-pan meal!

This tomato & ricotta tart is a light but flavorful dish. It gets the tartness from the tomatoes and the dollops of ricotta add just the slightest sweetness. The drizzle of a good pesto and some parmesan really gives every bite that extra punch. One of the best features about the recipe today is how versatile it is! You can substitute any of the ingredients or add veggies and flavors of your choice!

Thai Chicken Basil Stir Fry


If you are a fan of red thai curry, then this stir fry loaded with veggies is sure to be a winner in your home! The sauce of this stir fry is a concentrated version of a red curry with flavors of coconut cream shining through. You can add ay combination of veggies you like, though I do think these ones go really well together. This is a one pan (wok) meal! There is no separate frying or boiling required, and it literally comes together as a complete meal in one pan. I highly recommend you try this one out, because it is a favorite of mine!
If you like you can pair this with noodles or white jasmine rice, but we like to eat it as it is.

Lemon Bars


Lemon Bars are such a quintessential summer dessert! Perfect to have at picnics, brunches, bake sales, bridal showers or just paired with a nice cup of evening tea. The key to a good lemon bar is using fresh lemon juice. I can’t stress that enough. It really brings out the flavor and is totally worth it.
For this recipe, I’ve made a buttery shortbread crust and the filling is double in size because I personally like more filling on top. However, if you prefer less lemon filling, bake this in a 9 x 13 glass pan and it will be perfect for you.

Orange Chicken


Orange chicken is one of our family favorites when we order from Panda Express. This recipe is a bit different and does not use fresh orange juice as some of the others do. The orange flavor comes straight from the orange zest and takes it to another level!
The frying of the chicken has to be done in batches, and that is probably the only thing that takes time. Other than that, it comes together quickly.
