Baked Salmon Grazing Board

Grazing boards have come a long way and have become popular for both hosting parties, or just to have at home with your family. The versatility of grazing boards allows you to cater to many tastes and you can assemble it with what you have on hand.
For our family, it works great because the kids can pick and choose the veggies they like and plate it up as they like.For meals at home, I try to keep a good lean protein, colorful nutritious vegetables, assorted condiments, and some variety of bread.

I thought I’d share our family favorite salmon recipe along with some sides that help make this a complete meal.

Baked Salmon

Flaky and perfectly cooked salmon to serve with a dill sauce.

Ingredients
  

For the salmon marinade

  • 4 fillets of salmon
  • 2-3 Tbsp fresh dill
  • 2 -3 Tbsp fresh lemon juice
  • 2 Tbsp EVOO
  • 3 -4 garlic cloves grated
  • Salt & pepper

For the dressing

  • 3/4 cup sour cream
  • 2 Tbsp lemon juice
  • 1/2 tsp garlic powder
  • 2 tsp Dijon mustard
  • Zest of a lemon
  • 2 Tbsp fresh dill
  • 1 tsp sugar
  • Salt to taste

For the grazing board, use any vegetables/condiments of your choice.

  • Roasted sweet potatoes
  • Snow peas blanched. First blanch in hot water and then in ice cold water.
  • Oven roasted cherry tomatoes. Drizzle with olive oil and bake at 450F
  • Avocado sliced
  • Olives pitted whole
  • Capers
  • Red Onions thinly sliced
  • Roasted garlic. Cut cross wise drizzle with oil, and bake at 450F for 40 mins
  • Boiled eggs
  • Baguette
  • Cucumbers thinly sliced
  • Lemons thinly sliced

Instructions
 

  • Mix all the ingredients and apply to the salmon and bake in a preheated oven at 425F for 12-15 minutes till light and flaky.
  • Take all the ingredients of the dressing and mix together. This can be served in a bowl or topped on the salmon once you are ready to serve.
  • Prepare your grazing board and lay out to serve.
